Interview with:

Anthony & Agathe from Mattituck Mushrooms

When and why did you start your business?

Mattituck Mushrooms was founded by two artist, Anthony Holbrooke and Agathe Snow.

Mattituck Mushrooms began as an adjunct farm to Agathe sister's (Anne Apparu-Hall) business, Mushrooms.nyc, an urban mushroom farm based in Brooklyn. The Mattituck Mushroom farm as we know it started to flourish during the pandemic.

What's your story?

Agathe Snow (mixed media artist) and her partner, Anthony Holbrooke (sculptor) are the artist/ farmers behind Mattituck Mushrooms.

Mattituck Mushrooms is part of Art Food Health llc. their official business name for all they do at the farm. “Art because we were and still are artists, only now we incorporate our Mushrooms into some of our work.”

What do you offer?

Mattituck Mushrooms welcomes people to the farm for tours and to buy and forage for their own mushrooms by appointment.

Anthony and Agathe sell a large variety of mushrooms at the farm including Shiitake, Maitake, Chestnut, Lion's Mane, Chaga, Reishi, King Trumpet, and a variety of Oyster mushrooms including Black, Blue, Yellow and Pink.

For good health they make tinctures, tonics & extracts from Mattituck Mushrooms.

They are extremely knowledgeable about cooking mushrooms, all the benefits of adding mushrooms to your diet, as well as all the health benefits of adaptogenic mushrooms as teas and tinctures.

Agathe makes Mushroom Paper from mushroom pulp which you can find exhibited around the North Fork, her other work has been exhibited in NYC and around the globe.

What else do you want people to know?

The farms regular clients include many of the best restaurants & fine local food spots including The North Fork Table & Inn, Tutto Il Giorno in Southampton, and The Minnow at the Galley Ho.  They also sell their mushrooms at the fine farm stands on the North Fork, including 8 Hands Farm in Cutchogue, KK's The Farm in Southold, East End Food Market in Riverhead, and I & Me in Orient Point.

“We love growing healthy food to inspire & feed our community.”
